ANTIOXIDANT ACTIVITY OF BIOACTIVE PEPTIDE DERIVED FROM PEKIN DUCK FEET GELATIN HYDROLYSATE

Malaysia is one of the main producers duck meat globally with increasing demands. Increasing in production will also increase number by-products such as skin, feet and bones. Pekin (Anas platyrhyncos domestica) famous breeds. Gelatin that was extracted from has shown a potential raw material for bioactive peptide can involve various functions organism physiologically example antioxidant effects. Duck gelatin hydrolyzed by using five commercial enzymes (Alcalase, Esperase, Flavourzyme, Neutrase Protamex) to identify radical scavenging potencies derived peptides. All were studied under three different enzyme-substrate ratio (1:10, 1:15, 1:20) every enzyme optimum pH temperature. Scavenging activities included DPPH activity ABTS activity. In activity, all showed highest percentage at (1:20) condition. Among studied, Protamex (54.83%), followed Alcalase (53.12%), Esperase (49.81%), Flavourzyme (49.32%) lastly (47.49%) sample concentration 4.5 mg/ml. The half-maximal inhibitory (IC50) value measured. produced hydrolysate lowest IC50 against (0.45%) (0.54%), (0.57%), (0.60%) (0.74%).
